Ingredients:
9 large flour tortilla shells
2 Tbsp olive oil
2 lbs of venison burger
2 tsp minced onion
2 tsp paprika
2 tsp of cumin
2 Tbsp of chili powder
2 tsp of salt
1 tsp of pepper
1 can diced tomatoes
1 can of black beans
1 can of corn (drained)
1 large can of enchilada sauce
1 can of sliced black olives
2 cup shredded blended cheese
1 small can of green chilies
Instructions:
Brown meat in oil and add all seasonings; then add tomatoes, beans, and corn.
In cooking dish layer bottom with enchilada sauce then place 3 tortillas in dish. Place half of mixture on top of tortillas and then sprinkle with cheese. Repeat this with another layer of tortillas and meat mixture. Cover mixture with tortillas and spread enchilada sauce on top. Top with cheese, green chilies and black olives.
