1- 8 oz. crushed corn bread stuffing
1 cup chopped onion
1 cup chopped celery
¼ cup minced fresh parsley
1 egg
1 ¼ cups beef broth
1/3 cup butter, melted
*1/2 tsp. seasoned salt *Substitute with 1 tsp Pit Boss Smoke Salt & Peppering
*1/2 tsp. pepper
1 pound Elk steak USE PIT BOSS RUB SEASONING
Pre-heat grill to 400°
- Rub meat on both side with Pit Boss Rub Seasoning
- In cast iron skillet, melt butter and add onion and celery. Cook on low to medium heat until onions are transparent. Pour mixture into a large mixing bowl. Add bread stuffing, egg, parsley, and broth.
- Lay stuffing mixture down center of the steak. Roll steak starting with the long side enclosing the steak. Tie with string.
- Remaining stuffing can be wrapped tightly in foil and placed over the rolled steak.
- Grill to desired doneness.
