2 -3-5oz lobster tails
2 – cups sifted flour
1- cup corn meal
1- egg
½ cup milk
1- dash 5 pepper blend ( Man Cook)
1- dash chipotle seasoning ( Man Cook)
Peanut Oil
Remove shells from lobster but leave the tail on and set aside. If you are worried about the lobster tail curling, you can put a skewer long ways through the tail. Heat peanut oil in skillet (you need about an inch and ½ of oil in the pan). Mix all other ingredients together to form a batter.
Once the oil is hot, dip the tails in the batter and place them in the oil bottom side down ( this will help them not to curl up.) Cook until batter is golden on the bottom and then flip and do the same for the other side. It may take as many as 5 minutes per side to get the batter and thick lobster cooked.
Serve with your favorite dipping sauce. This is a Southern Style Lobster Boil.
