Ingredients:

1 lb smoked sausage, sliced into ¼-inch rounds bite size pieces

4 cups baby potatoes, halved or quartered

2 tbsp olive oil

1 packet ranch seasoning

1 tsp garlic powder

1 tsp onion powder

½ tsp black pepper

1 cup shredded cheddar cheese (we like the Mexican blend)

½ cup of sour cream (optional, for serving)

½ cup chopped onion (optional)

Fresh chopped parsley (optional, for garnish)

 

Instructions:

Preheat your oven to 400°

Prep the Potatoes – Wash and cut the baby potatoes in half or quarters, depending on size.

Slice the Sausage/Brat – Cut the smoked sausage into ¼-inch thick slices.  Cook sausage/brats and remove and set aside.

Mix the Seasonings in a small bowl, combine:

Ranch seasoning

Garlic powder

Onion powder

Black pepper

Coat the Potatoes In a large bowl, toss the potatoes with:

Olive oil

Seasoning mixture miix well to coat evenly.

Roast- Spread the seasoned potatoes and sliced sausage on a baking sheet.  Roast for 35–40 minutes, stirring halfway through, until the potatoes are golden and tender.

Add the Cheese – Sprinkle the shredded cheese over the hot potatoes and sausage. Return to the oven for 5 more minutes, until the cheese is melted and bubbly.

Garnish & Serve – Top with fresh parsley and a spoonful of sour cream if desired. Serve hot and enjoy!
